It is also vegan, gluten free and can be made in a snap with just a few simple steps.
Ingredients
Vegetables
Pepper, chopped in cubes
Mushrooms, chopped
Cauliflower, chopped
1 Carrot, chopped in circles
1 Tunip, chopped
1 large, sweet potato, peeled and cubed
1 Large onion
2 Garlic Cloves
Olive oil
2 tins of tomato's or equivalent of fresh tomatoes
golf ball size of tomato pure
1 pint of water
1 vegetable stock pot
Chick-peas
Chopped apricots
Cuscus
Spices
1 Tablespoon of Harissa paste
1 Teaspoon of ground coriander
1 Teaspoon of ground cinnamon
½ Teaspoon of Turmeric
Vegetable Tagine Recipe
Step 1 - Prepare the Vegetables

Step 2 - Fry the onion in a pan with a drop of oil

Step 3 - Add all the vegetables except the tomatoes. Add 2 cloves of garlic and fry for 10 minutes.


Step 4 - Add the spices and fry for 5 to 7 minutes.
1 Tablespoon of Harissa paste
1 Teaspoon of ground coriander
1 Teaspoon of ground cinnamon
½ Teaspoon of Turmeric

Step 5 - Add The fresh tomatoes and a golf ball size of tomato pure

Step 6 - Add 1 pint of water and a vegetable stock

Step 7 - Simmer on a low boil until the vegetables are softer

To serve
Add chick-peas and chopped apricots.
Serve with Couscous.
